2020 vintage, Simultaneous harvest of all grapes in late August. Passed directly through the press and fermented in INOX, without skins. At the end of fermentation, aged in INOX until April 2021 and then directly in bottle. One racking pre-bottling. Fermented with its own yeasts, with no added sulfur, no temperature control, no filtration or clarification. With lees in suspension from November to March. Fragrant, fresh, flavorful. Dedicated to MILTON, protagonist of Beppe Fenoglio's "A Private Matter," a hero of the Italian Resistance, who, while immersing his life in saving his land, is haunted by thoughts of the woman he loves who may have betrayed him.
